Will They Eat This?

Need a quick, nutritious and delicious dinner in a snap? Yes, there are a bunch of components to this salad, but if you shop smart, it's ready in no time. You will be thrilled with the burst of flavors in your mouth, a couple that will really surprise you.

Apple Cider Vinegar Dressing

1/4 cup Apple Cider Vinegar
3tbs Olive oil
1/2 tsp Purvia (natural sugar substitute)
1/8 tsp black pepper
1/2 tsp salt
1 dash red pepper sauce

Whisk together and pour about 2 tbs of dressing over each serving of salad.

Beet & Field Greens Salad

1 bag of Field Greens
1 small box of golden raisins
1 tbs cranraisins
1 can of red beets (not pickled) sliced into strips
1 small can of mandarin oranges drained
1 package of slice baby bella mushrooms
1 tbs of Chavrie goat cheese
2 tsp candied pecan pieces
1/4 cup of garlic croutons (home made)

Lay a bed of salad greens in a plate and top with remaining ingredients; pour 2 tbs of dressing over your salad and enjoy! 

Garlic Croutons

4-5 pieces of stale bread cut into cubes
4 tbs of butter
2 tbs of olive oil
2 cloves of garlic smashed -- no small pieces, just large smashed chunks to flavor the oils
Salt & Pepper to taste

In a medium skillet over medium heat add oil and butter; when butter is melted, add pieces of bread and allow to brown; sprinkle with garlic, salt & pepper; allow to cool and add to salad. These can be made in advance.

The Stats:

2 out of the 6 at this meal. I really only have 2 salad eater in the bunch. The adults thought this was one of the most delicious salads ever. I had a friend over for dinner and we devoured it!

The Verdict:

This is a salad I will make when I have a main dish to accompany it. It was absolutely delicious. I don't want this one to get too far out of the rotation. It's definitely a salad to serve to company -- they won't even notice the beets!
