Will They Eat This? Vol. 5
Lent is upon us, and it is typically a challenge to come up with a Friday meal other than pizza or pancakes that everyone will eat. We stay meatless on Fridays throughout the year, so I am always happy to find a meatless recipe that satisfies on those nights when you just need to break away from the ordinary.
I am a huge fan of Breakfast Burritos. It is easy to make them without meat, and they still taste wonderful. They are quick, easy and offer a fun twist on "breakfast for dinner!"
8-10 eggs, whisked
3 tbs milk
1/2 tsp salt
pepper to taste
2 tbs vegetable oil
1 pkg. Simply Potatoes Southwest Style Hash Browns
1 tbs. vegetable oil
1 cps. shredded cheddar cheese (sprinkled on top of each burrito)
Hot Sauce to taste
1 tsp of Salsa per Burrito
8 Mission Burrito shells
In a large bowl, whisk together eggs, milk, salt and pepper; add oil to a large skillet over medium heat, scramble the eggs; while the eggs cooking, in another skillet, cook the hash browns according to pkg. directions.
Warm the burritos wrapped in paper towels in the microwave for 1 min.
Time to assemble:
Take one tortilla; in the center add about a 1/4 cup of scramble eggs; on top of the eggs add about 1/4 cup of hash browns; top with any or all of the condiments.
How to Wrap:
Fold one side of the tortilla over the filling; fold the two adjacent sides in to form a sort of envelope; roll the tortilla toward the open end; It will roll up like a burrito!
5 out of 6 will eat these burritos, and really enjoy them
1 out of 6 will only eat them deconstructed -- eggs & cheese, hash browns and absolutely NO tortilla -- usually a plentiful side of maple syrup!
Of course, Lyle and I love them!!!
I will make these during Lent, I will make these in a tent; I will make these at morns light, I will make these in the night. I do so love -- Breakfast Burritos!
